Modus Operandi have made waves in Sydney and their brewery bar is a great place to get their hoppy beers fresh.
Beer geeks will love being up close and personal with the stainless steel. You’re close enough to read the brewers notes hanging from the fermenters.
Look up into a corner of the brewery and you’ll see where they mill the grain.
It’s also worth taking a moment to marvel at the sheer number of tanks sat around the brewery. They’re packing a hell of a lot of production capacity into a very small space, which can only be a good thing for Sydney’s thirsty beer drinkers.
The modus operandi is written on the wall… “honest, local, fresh”. That’s the inspiration behind the M.O brewery bar.
Beer And Burgers – American Style
The food is fantastic, including an extensive pizza menu, but you can’t really look past the M.O. burger. It’s perfect to pair with some of the hop-forward beers. The American influence is clear to see from the comfort food to the massive hop additions in the beers.
And that’s what you really want to visit Modus Operandi for, their beers. Including the award winning Former Tennant Red IPA.
Drink Beer And Learn Something
When you’re drinking your beer, I recommend you flick through the beer menu which gives more information and tasting notes. It’s good reading for newbies and beer geeks alike.
Perhaps you just want to sit outside in the sun working your way through a pint, but if you’re there to sample a bit of everything, start out with their saisons before moving onto the Layback and Modus pale ales and working up to the super hoppy IPAs including Former Tennant and Zoo Feeder.
In among all the hops, leave some room for the Silent Knight porter which is a lovely example of the style.
Satisfyingly, they do serve pints, but if you are going to sample a range, be responsible and stick to tasters.
Take The Hops Home
Once you’ve sampled the beers you’ll probably want to take some beer home. Modus Operandi beers are popping up further afield but, at the time of writing, they’re not currently packaged in the traditional sense.
You’ll find them on tap around Sydney but for home drinking, you’ll need to turn to their CANimals. These are litre cans, filled from the keg and you can pick them up from the brewery.
They’ll have their most popular beers sat in a few CANimals in the fridge but you can ask for your tipple of choice and they’ll fill up and seal a can of your favourite right there at the bar.
Obviously there’s plenty of merchandise to be had featuring Modus Operandi’s updated branding. Outside, you’ll see their distinctive mark everywhere, including on the artwork.

It’s a beautiful, compact venue which does a down-to-earth, homely drinking experience perfectly. There’s good, honest and incredibly tasty food and some of the best beers you’ll find in Sydney.
