The One Drop Brewing tap room in Botany is a community space that welcomes families, pets and lovers of good beer.
Opening a brewery in 2019 seems to necessitate a local-first approach. With that comes the need for a welcoming space, community engagement, top notch hospitality, and of course, excellent beer.
One Drop Brewing have ticked all the boxes within a few weeks of opening.
The brewery space will be familiar to those who have been around Sydney’s beer scene for a while. It’s a high ceilinged warehouse with exposed walls, some simple furniture and a clean and simple bar. Tall stainless steel fermenters loom in the background.
A Community Hub
All of this comes together to create something greater than the sum of its parts. Perhaps it’s the sun shining in from the beer garden or the smiling faces of a buzzing group of locals, but it feels less a brewery tap room and more a community hub.
Firstly, the space is welcoming despite being set back in a mostly industrial area. This is partly to do with the clean and bright aesthetics but mostly to do with the people. Expect a warm welcome and service with a smile. Sydney has A-grade hospitality game but it’s still amazing what a difference a smile and a polite word can make to one’s experience.
Another reason it feels so approachable and familiar is the crowd. It’s mostly locals given how tricky Botany is to get to from further afield.
It wasn’t long ago that a new brewery would be solely frequented by (mostly male) beer nerds. They have been beaten to the One Drop Brewing tap room by local families. You’ll need to watch your beer as you navigate the kids and dogs running around and playing. But this space is as much for them as it is for those who want to ponder over a Double IPA.

If the thought of sunshine, beer and smiling faces isn’t enough of an attraction, the One Drop Brewing tap room also plays host to food trucks and DJs. You can wash a burger down with a pilsner and some reggae beats.
What about the beer? Well, if the thought of the Double IPA and Pilsner doesn’t entice you, then perhaps a series of fruited sours might. Or maybe you’ll do as many of the locals do and enjoy a Botany Bay Lager. If neither, then the XPA or a fantastically sessionable Table Pale are the way forward.
The One Drop Brewing tap room is a wonderful addition to the Sydney scene, even more so because it’s serving an area which has been short of options until recently, and because it’s putting its local community first.
