Sausage Queen Brewing is the brewing arm of the growing sausage empire overseen by Chrissy Flanagan of The Sausage Factory.

The Sausage Factory was one of the first casual eateries to make good local beer a prominent feature, long before many top restaurants had considered it.
Chrissy Flanagan and Jim Flanagan are co-owners of the restaurant and have been vocal about their love of craft beer and in particular that of local breweries in the inner west.
Native Australian Ingredients
The duo dabbled with their own beer back in March 2018 when they released Boss Ale which was brewed by Jay Cook of Bucket Boys Craft Beer Co. It was released at the Bucket Boys bar where Chrissy and Jim were serving up sausages during a launch event.
After that point, they enlisted the help of other local brewers. At the official launch of Sausage Queen Brewing in September 2018, they had a lemon myrtle saison, and a gose made with native lime and red gum smoked salt.
Those beers hint at the inspiration that drives the approach to brewing for Sausage Queen. The focus, much as it is with the sausages, is on unusual and native Australian ingredients.
Small Scale Brewing
At launch, Sausage Queen Brewing beers were being made off-site but the restaurant in Dulwich Hill has a 250 litre tank on the way. It’ll be used for fermenting beers for service on-premise. The Sausage Queen Brewing team have aspirations to keg and can their beer, sending it further afield.
The restaurant was always intended as a “sausage cellar door”, a place to taste hand made produce in the location where it’s produced, much like a brewery or winery cellar door. The team have extended this and The Sausage Factory will be a cellar door both for food and Sausage Queen beers.
Good Food & Good Beer
There are other breweries in Sydney using native ingredients but there aren’t many others demonstrating that brewing on a nano or micro scale can be a viable option for a restaurant. The culinary focus is clear and Sausage Queen Brewing is progressing Sydney’s attitudes towards the relationship between good food and good beer.
